What You'll Require
- 2 x Heavy bottom pot/pan with lid
- 2 x Wooden spoons
- 2 x Serving Bowls
Wash Jasmine rice 2-3 times in cold water till water runs clear.
Crush and finely chop garlic
Clean, wash spring onions. Cut white part of spring onions into 1 inch long pieces, and finely cut the leafy greens.
Keep the white onion and the leafy green separately.
Cooking Jasmine Rice
Add the rice and 1 1/3 cups water and salt to taste to a heavy bottom pot/pan with a lid. Cover the saucepan and bring the water to boil.
Reduce the heat to low, and let the rice simmer for another 9 to 10 minutes, until all the water has been absorbed.
Note: start the Tofu in spicy peanut sauce.
Turn off the heat, and leave the saucepan covered for about 10 to 15 minutes. Uncover the saucepan and fluff the rice with a fork.
Transfer to a serving bowl.
Cooking Tofu in spicy peanut sauce
In a frying pan, heat oil, add white onion from the spring onions and chopped garlic. Saute for 2 minutes.
Stir in spicy peanut sauce mix, vegetable stock, and mix well.
Add diced tofu, bring to a boil and let the sauce reduce and thickens. Check seasoning, add salt and sugar as necessary.
Garnish with chopped spring onions greens.
Serve Tofu and sauce over rice and garnish with spring onions.
