What You'll Require
- 1 x Heavy bottom pot
- 1 x Wooden Spoon/ Spatula
- 2 x Serving Bowls
Wash rice and lentil mix 2-3 times in cold water till water runs clear.
Soak in cold water for 10 minutes.
Wash and finely chop 1x tomatoes for cooking.
Wash and dice 1x tomato for salad.
Wash and drain the veggies for cooking.
Wash and drain salad veggies.
Wash and finely chop coriander for garnish.
Heat oil in a heavy bottom pot, add the whole spices and let it crackle.
Add chopped onions, sauté till light brown approx. 4-5 minutes on medium heat
Add ginger garlic paste, slit green chilli and saute for 1-2 minutes, stir constantly to prevent burning.
Add the spice mix and chopped tomato, cook till soft on medium heat for approx. 3-4 minutes.
Drain the water from the rice and lentil mix and add to the pot, fry lightly on high to medium heat for 2 minutes.
Add the veggies mix well, add 2 cups of water (approx. 450-470 ml) , add salt to taste and cook on medium to low heat till the water is absorbed.
Once water is absorbed (you'll see holes on the surface) close with a lid and cook for 4-5 minutes on very low heat.
Note: While the Khichadi is cooking, assemble the washed Salad veggies and diced tomato in a serving bowl, sprinkle seasoning and lemon juice and mix well.
Open the lid, give the Khichadi a good mix, add ghee, sprinkle chopped coriander. Serve Hot.
Serve Khichadi with salad.
Tip: Add beaten plain yogurt to the salad veggies to make it a Raita.
