What You'll Require

Oil 2 to 3 tbsp

Utensils

  • 2 x Heavy Bottom Pot
  • 1 x Frying Pan
  • 1 x Microwave Bowl
  • 3 x Wooden Spoon/ Spatula
  • 2 x Serving Bowls
  • 1 x Colander
  • Microwave

Pre Preparation

Wash rice  2-3 times in cold water till water runs clear.

Soak in cold water for 10 minutes.

Wash the Green Banana.

Wash the beans and carrot.

Cooking

Cooking Green Banana Coconut-Yogurt Curry

Add the washed green bananas to a heavy bottom pot , add water to cover, salt to taste and  4-5 curry leaves bring to boil.

Add the  yogurt coconut curry paste, reduce to low heat and simmer for 10 minutes till banana is tender. Remove from heat.

Note: While the green banana is cooking, start the Steamed Basmati Rice.

In a small frying pan heat 2 tsp oil on high to medium, add mustard seeds let it splutter, reduce heat to medium to low, add lentils mix fry till light brown, add cumin seeds, dry red chilli and curry leaves. Be quick in this tempering process to avoid burning.

Immediately add the sizzling tempering mix to the Green Banana Yogurt curry and close with a lid.

Cooking Basmati Rice

In a heavy bottom pot add 1.5 ltr of water, salt and a tsp of oil to heat.

Drain the water from the rice and add to a pot of water, bring to a boil on medium heat for 10-15 minutes.

Cook rice till Al-dente, remove from heat and drain into a colander.

Let it Drain completely, fluff with a fork and transfer to a serving bowl.

Cooking the Beans and Carrots Stir Fry

Steam the washed carrots and beans with salt and a little water to cover the veggies, in a microwave for4-5 minutes. Drain the water.

In a small frying pan heat 2 tsp oil on medium to low heat, add mustard seeds let it splutter, add lentils mix fry till light brown, add cumin seeds, dry red chilli and curry leaves. Be quick in this tempering process to avoid burning.

Add the steamed veggies and cook on high heat for 4-5 minutes, constantly tossing the veggies till cooked but crunchy.

Transfer in a serving bowl.

To Serve

Garnish curry and stir fry veggies with chopped Curry leaf. Serve hot with steamed Basmati Rice.

TIP: You'll enjoy this meal with Pappadam or potato chips on side.
