Wash and drain veggies.
Wash and cut spring onion, Kaffir lime, coriander and Thai Basil.
Crush lemongrass and garlic cloves.
Wash and slice chillies.
Cooking Ca Ri De
Heat oil in a heavy bottom pot, add the marinated goat pieces in batches and brown on high heat. Remove and keep aside.
Sauté chopped garlic, shallot, the curry powder for 30 seconds. then add in the goat pieces. Continue to stir and cook for a few minutes on high heat.
Add lemongrass, ginger, kaffir lime leaves, sugar, seasonings and stock. Mix well and simmer for 10 minutes.
Add coconut milk and bring it back to a simmer, cover and cook until the goat is almost tender 30-40 mins.
Add sweet potato and onion wedges and simmer uncovered till sweet potato pieces are tender. Check for seasoning.
Add the lemon juice and serve hot with Baguette.
Garnish with chopped spring onion, coriander, Thai basil and chillies.
